Our aim is to provide to you a complete and delicious meal using only the best possible certified organic ingredients. If we can't source a top quality certified organic ingredient due to supply constraints, we temporarily take that item off the menu. No sacrifices.
We buy from suppliers who are committed to the principles of organic food production and see the industry as an opportunity to effect positive change. One way we scrutinize our vendors is by researching that they have not sold out their operations to companies who simultaneously have a stake in the conventional food industry. Companies such as these are incentivized to lobby for the lowering of organic standards and practices so that it is easier for them to co-mingle ingredients and facilities between their organic and non-organic product lines.
The beef and dairy we buy is always grass-fed as well as being certified organic. Grass-fed beef and dairy products help ensure that the animals were raised in open pastures and given a diet that is consistent with what their bodies were designed to process. Also we think it tastes better. Just like with the food we prepare fresh every day in our kitchen, better inputs yield better outputs. Simple logic.
We do not use any petrochemical based plastics in our packaging. This is especially important in products which are heated. When heated, petrochemicals are proven to be cancer causing carcinogens and can leech into the food surfaces they come in contact with. We substitute with plant based bioplastics in our packaging as well as our utensils. Conventional plastics are also a terrible environmental polluter so you will never see us use plastic bags, even if this means we incur additional costs. These are the types of decisions that more businesses should make to ensure the sustainable health of our bio-system.
In our kitchen we use filtered, purified, and naturally alkaline and ionized water.Water quality is degrading as levels of pollutants and industrial waste continues to seep into our aquifers. This should be a significant concern in areas like Long Island that have dense populations, a history of industrial land use, and rely on well-drawn water. Filtering the water at the point of consumption is the best way to ensure its safety and purity. We also believe that the best food starts with the best possible water, especially our soups. Try one and taste the difference.
